How long can i keep this cheese refrigerated and before cutting? Thereafter can i vac seal it and freeze, or will that destroy the flavour?

Hello, I am Spanish, Manchego cheese cannot be frozen, you would spoil it and it loses its flavor and texture, it can also upset your belly after freezing. This cheese can be kept perfectly without problems in the refrigerator for weeks, the only thing you have to do is cover it well with plastic wrap so that it does not dry out and stays fresh and tender, when you are going to cut the piece that you are going to eat, you must remove it by cutting the black rind that the cheese has because the black rind is so that the cheese stays fresh and tender but it is not to be eaten, remember the cheese can last up to approximately 6 weeks in the refrigerator once opened but you must wrap it with plastic wrap completely and cut the black rind to the slice that you are going to eat, doing this the Manchego cheese is how it should be consumed and maintained correctly.
