Does this potato starch qualify as “resistant”? I thought potato starch had to be cooked and cooked to become resistant but this is raw, no?

There is more than one kind of resistant starch, what you are thinking of is a retrograde resistant starch, created as you said by cooking, then cooling. Uncooked Potato starch is a resistant starch to begin with as well, - people usually just don't eat raw potatoes.

You can store in freezer, however I’ve never heard anyone store potato starch in freezer and I grew up with potato starch for over 40+ years.. Regular room temp will be fine. And unlike storing flour, you will not get flour bugs in potato starch.(if that’s your concern😉)

I don't know. I was more concerned that it was Gluten free and non GMO. It doesn't matter to me what kind of potatoes it is made from.

Good product. Used it as a thickener one time - liked it much better than corn starch. Also dissolved in cold water in the evening for its resistant starch benefits. It dissolved easily. Time will tell better since I am new to this.
