I can’t find a list of ingredients. Do these have almond flour in them?

Almond flour, coconut flour, Non-GMO resistant dextrin, palm oil, butter, eggs, whole milk powder, natural vanilla, baking soda and monk fruit extract. 130 cal 4 pieces 12 g carbs 9 grams of fiber 1 g sugar

How many layers are there? The real ones have to layers of cookies.

If I recall, it had 4 layers of cookies, but out of all that there were only about 5 cookies which were whole. Every other cookie was in crumbles.

What is the shelf life of these cookies? My tin does not have an expiration date?

My expiration date is March 25, 2024. It is stamped in very light black letters above the nutrition facts. You have to turn the can so the light hits it just right to be able to see/read it.
