If I cut a lettuce leaf off the plant, will more lettuce leaf grow

If it is a loose leaf lettuce (as opposed to a solid head lettuce, think iceberg). Yes you can cut leaves from the outside of the head, near the base. This leaves the developing leaves closer to the center to mature. And eventually they will be on the outside and can be cut off for a crisp salad. I will warn though, leafy greens tend to sprout with a bit of chill in the air!

Will lettuce keep growing back year round in SoCal?

You would need to replant your lettuce seeds eventually. You most likely can grow lettuce year-round. If it gets too hot though, your lettuce might bolt. Each lettuce pack has a couple of thousand seeds though, so one set of our lettuce seeds for planting variety pack would last you a long time! I see lots of salad greens in your future. Awesome seeds. I just planed mine. Neat and waterproof envelope packing and very affordable. Mine took 1 week to take germinate. Write down the dates you plant these.

All good but the spinach.

I'm growing in a couple hydroponic units. I've had good luck with these seeds. Only problem I've had was with the spinach, which has either not germinated, germinated and quickly died, grown very stunted, or in a couple cases developed a mold. Maybe there's something I'm doing wrong, something they need the others don't. But whatever the case, I think I've only managed to generate one single eatable leaf of spinach before giving up and focusing on stuff that grows.
