Is there an adapter to clone or dock an ide hard drive to this inateck unit ???

I'm afraid not. This docking station is designed for SATA HDDs/SSDs. 
 
You are recommended to order UA2001 (https://www.amazon.com/dp/B00MLYV5XY) if you have an IDE hard drive.

Question 2

Can you clone multiple hard drives on to 1 large source drive?  for example, source drive is 2tb, can i clone multiple 500gb drives?

Actually, the offline clone could only proceed between 2 hard drives rather than multiple drives at one time. Besides, the source disk should be plugged into slot A and is defined as the disk that you could copy files and datum from it to another target disk. BTW, if the following conditions could be met, the off-line clone could be finished.

1. Make sure that the drives are fine and have no bad blocks.
2. Make sure there's no cable connection between the docking station and the computer.
3. A is the drive to be cloned, B is the target drive to clone, the real capacity of drives requires B≥A.
4. Pressing "Clone" button on the product about 3 seconds. When release the button, the LED indicator of 100% will light up, then please QUICKLY click "Clone" button two seconds after and while the light is on.

Will it clone sas drives? upgrading to ssd’s. if so which adapter or cable extension works best? thank you all!

I don't think it will because the sata drive has two different connecters and the sas drive connecter is all one connecter, the driver cloner is named sata, in the middle of the sas drive is a separator between the power and  info cable, the cloner is made to accept the sata hookup. Anyway that's what I think
