Are the tray's two internal silicone plugs removed ?

No just leave them in situ they hold the grill and divider in place

Are there any tutorials that give instructions on how to sync foods that aren't listed on the front panel of this air fryer

There's an app you download from the instruction manual with quite a few recipes, Also plenty of Facebook groups where people put up recipes and instructions for cooking a huge range of different foods, Apart from that it's not that hard to work things out, to be honest most thibgs I cook at 200 degrees and just check the food regularly to see if it's done/needs more time, It's not hard to use at all and one of the best appliances I've ever bought.
