Why do I need the tiniest screwdriver in existence just to get it open?

My thermometer had the battery in position. I think it may have had a plastic tab that you pull out to allow battery to work.

Does this clip to side of pan so you don't have to hold it when heating sugar, chocolate etc?

no it will not clip to the pan, however it does have a long handle, that the thermometer slips into then can be used without burning your hand, very useful and accurate measurement. I use it for sugar and all confectionery including chocolate tempering

is this okay for deep frying?

That's because you didn't read the instructions..., it does have a hook if you use it properly. The metal storage case has a clip on it, a bit like a biro pen, there's a special rounded hole which you slide the thermometer into thus allowing you to rest it on the side of a pan. When in doubt read the instructions, you might have saved yourself some trouble ;)
