You would have to reset the countdown, or simply count up to 20 and 10 seconds.

Can you Shut off the beep sound

The automatic beeping it does on the hour and half-hour? Yes! Go to clock-mode by turning it on (holding the center button for 3 seconds); push the center button 3 times; at that place, push the right button once, and "on" should disappear. That's how you know that it's off.
