To Texans, barbecue is elemental. Succulent, savory, perfumed with smoke and spice, it transcends the term "comfort food." It's downright heavenly, and it's also a staff of Texas life. Like a dust storm or a downpour, barbecue is a force of Texas nature, a stalwart tie to the state's cultural and culinary history. Though the word is often shortened to "BBQ," the tradition of barbecue stands Texas-tall. Photographer Wyatt McSpadden has spent some twenty years documenting barbecue—specifically, the authentic family-owned cafes that are small-town mainstays. Traveling tens of thousands of miles, McSpadden has crisscrossed the state to visit scores of barbecue purveyors, from fabled sites like Kreuz's in Lockhart to remote spots like the Lazy H Smokehouse in Kirbyville. Color or black-and-white, wide angle or close up, his pictures convey the tradition and charm of barbecue. They allow the viewer to experience each place through all five senses. The shots of cooking meat and spiraling smoke make taste and smell almost tangible. McSpadden also captures the shabby appeal of the joints themselves, from huge, concrete-floored dining halls to tiny, un-air-conditioned shacks. Most of all, McSpadden conveys the primal physicality of barbecue—the heat of fire, the heft of meat, the slickness of juices—and also records ubiquitous touches such as ancient scarred carving blocks, torn screen doors and peeling linoleum, and toothpicks in a recycled pepper sauce jar. Review: Can a Book Taste like Texas BBQ? - In the case of Wyatt McSpadden's Texas BBQ, the answer is yes. This gorgeous coffee table book showcases work by one of the best photographers in the state documenting the steaming, dripping, juicy foodways of Central Texas. The book itself is a piece of history and is filled with photos from McSpadden's twenty years documenting barbecue around Austin. For me, it was like a walk down memory lane as I've enjoyed many of the same spots for authentic barbecue, prepared by pit masters that have been smoking meat for decades. Favorites like Kreuz, Smitty's, City Market, Cooper's, and more had me dreaming of my next road trip. Review: High level photography of Texas’s treasured bbq joints - Stunning photography of some of the best and most interesting barbecue joints in Texas. Aaron Franklin’s story was enjoyable as was Daniel Vaughn expresses today’s state of Texas barbecue in an eloquent essay. Wyatt superbly captures images from iconic barbecue joints and sprinkles in just the right amount on new arrivals on to the Texas barbecue scene. You get something new every time you flip through the pages of this book.

Great coffee table book, it’s not a cook book
I thought it would have some good recipes or tricks of the trade but it didn’t. Still a really cool book

Wonderful quality and great pictorial insights to the barbeque.
What a wonderful book. Now, this is about the people that make the barbeque, so you need to be aware of that. The emotion coming out of the pictures will keep you looking at all the details available. Truly remarkable. I found the quality of the photography outstanding and yes, you can actually smell barbeque smoke from the book. Trust me, close your eyes and you will to.

Who has it better than them
This is NOT a recipe book... it is mostly pictures and stories of people across Texas who smoke meat. It was fantastic, and a great coffee table book to tell everyone that you are serious about smoking meat!!!

Get it while it's hot folks.
This book, TXBBQ, is a treasure. Wyatt McSpadden's photos take you into the world of BBQ joints all across Texas. You will experience the sympathetic smells because you are there, in the midst of these places and the souls of these "smoking" men and women making this story possible. The design of the book is magnificent. Five stars? Hmm. This book goes to eleven. P.S. Make your Christmas shopping easy. You won't miss on this one.
