Can i use this to empty a 600l hot tub once every 2-3 months (my hot tub is below the drain)

You can, but depends how far the pump has to lift the water. It's good for a lift of 600 to 700 mm with a 8mm internal diameter pipe. So I guess it would take quite a wile to empty the 600 ltrs.

What mm pipe size can i use on this?

I'm using 1/2 inch as its in a small water feature lifting water to a height of just 2-feet.

Could I take the plug off that comes with it so I can put cord through wall and attach another plug

You can do that the one on it has no screw to undo so has to be cut off you can take the fuse out of the plug and reuse it in New plug

Can I fit a adapter in the Nozzle to take a 4mm tube I want it to pump water in to my irrigation system in greenhouse

Great product strong easy to assemble

I had a look for quite some time for a small pump for the garden pond which is only used by frogs. Blood I found this one as others were very expensiveReally easy to assemble and very good value for the money ,easy to clean too.
