Do I need to buy weights if I use this product?

No it has everything you need besides the mason jar.

What are the lids made from?

I emailed them and asked - they said polypropylene (PP / #5). I asked if they had any concrete way to verify this - they said no and offered me a refund, which could be good customer service or trying to squirm away from scrutiny about something significant. I hate living on this planet. :D

How do the lids work if/when I need to open the jar at a later stage?

you just simply twist the lid to open the jar. When you put it back, shortly the pressured air from fermenting builds up and air lock will bubble again,
