Is this wire shielded for use next to electrical wire and if not how far away should it be placed to stop interference?

The wires in this cable are not shielded. Sorry I can't answer part two of your question.

Will the copper strands of each black and red wire fit in to the connections of old and new audio receivers / speakers or too thick for some?

It should fit in most connections, 12 AWG is thick but if you are worried I would recommend going to a 14 AWG cable.
