What does super-cardioid mean? Why is this a great featire?

It refers to polar or pick-up pattern of the mic or rather which side of the mic is most sensitive. Cardioid means it picks up from the front of the mic. Omnidirectional means it picks up from all around the mic (360 degrees). This supercardioid means the mic picks up from a slightly more narrow field (or cone) in front of the mic. Making it super directional. Cardioid, supercardioid and ultracardioid also pick up slightly from directly behind as well.

does this work for GoPro 8?

It can work with GoPros, but you will need a GoPro 8 mic adapter to connect the 3.5mm mic cable, as GoPro doesn't have a standard 3.5mm mic port.

Some say the mic can monitor mic pickup sound-others say can only monitor playback sound. Which is it?

The second connection isn't for mic monitoring necessarily. It just allows you to daisy chain headphones that are passed through the TRRS connection from your phone or computer. If you enable "Listen to Mic" on your computer or phone, then yes, you'd be able to hear what was coming out of the mic.
