How large are the bags ? Our racks are 600 mm wide

Should fit as long as not deeper than ~500mm The bags are roughly 520x750mm, with the zip closure along the short edge. I can fit 4 racks 500x400mm in - just enough liquid if you jiggle it about a few times during the soak.

How many selves can you clean in a bag? If i have 3 shelves do i meed 3 kits?

One kit will clean oven and up to 3 shelves. Put shelves in plastic bag and about 40-50% of cleaning fluid in bottle. The remainder of the fluid is then spread on surfaces top, bottom sides and back of oven and left overnight for it all. Then wipe oven clean, scouring if stuck onto inner oven and clean with hot soapy water after. Racks should all be clean in the plastic bag, cut off a corner once over sink, releasing all fluid, then clean if further needed with a scouring pad, rinse and dry.

My shelves are 800 wide. Could I use my own bag?

Think bag will be large enough ,i personally wouldn't use a different one

Will the bag take 90cm racks?

Bag size for racks is 765 x 540mm, which unfortunately is not big enough for your 90cm racks.
