I am planning to use this for horse halters/bridles and dog collars. Will it adhere to nylon and leather? Also are they easily rubbed off?

I think it would be okay for dog collars if the thickness is not more than the weight of denim. I have not used it for anything heavier than denim so could not say for sure but this is definitely not a commercial tool. It's more for crafting.

i want to use this for headbands will the stones backing scrath head or get caught in hair.?

From my experience I think you should apply the stones to your main fabric and then add lining or interfacing to the back of the headband for coverage
