Does this work well for breaking long thin pieces of glass?

No, this tool is plastic and too flexible. The metal version with a plastic cover to pad the jaws works better. For really thin pieces, the grozing pliers work best.

Does anyone know which interchangeable jaws to use for what and how to put them on?

They just snap on over the ends of the pliers. I don’t use them, I find it best to apply pressure to one side of the glass in my wall mount glass cutter. I use the pliers when I have a very small amount of glass to trim off like less than an inch. I use the pliers to hold the small section of glass near the score line and snap it off. I believe the rounded bump adapter when applied aligned to the score it will snap the glass at the score mark. Hope this is helpful.
