Meat Dept. Worker (5yrs)
I bought this knife I wanna say a few weeks ago, and very thorough use, i wanna give my honest opinions as a meat department worker (5 years of experience). First of let me tell you about the functionality, it is fantastic in my relative experience. If I have to debone a pork shoulder, or I got to debone a beef shank etc. it has like the perfect amount of flex to get into the curbs of the bone. I sharpen the knife I wanna say at least once a week on a 1000 grit diamond plate, just to maintain the edge I have yet to do a full on sharpening as I find that the edge retains quite nicely. I will say this, because this is 400 series high carbon stainless steel, it makes edge maintenance good, but it does make it a bit more susceptible to knicks on the blade if dropped from say shoulder height (about 5 1/2ft). But it’s been an amazing knife so far it feels great in the hand very light weight, and amazing price I’ve had victorinox 6” inch fibrox and I would definitely chose this knife over that one. But that’s my personal preference. I definitely will continue using the Dexter-Russell brand for a while.

This knife is super sharp, holds an edge well, and has a comfortable handle with easy clean rust proof materials and it is comfortably lightweight. This shorter flexible blade makes breaking down larger primal cuts fast and easy providing excellent performance. Overall this knife is a great value. Dexter Russell is the brand I rely on for all my kitchen knives. I use these knives to butcher up venison and large grocery store cuts.

Great knife for about anything
Great knife! Fits my hand well and feels good while using it. Stays decently sharp, hit enough bones and trim enough, and you’ll have to sharpen/hone it just like any other.

Great boning knife
Great blade shape for deboning. Purchased to process deer. I have deboned 5 deer, using almost exclusively this knife. I hit it with a home a few times in the process, it has maintained sharpness. The handle is a bit larger than Victorinox, but perfectly comfortable. The shape and texture offers an excellent grip with bare hands or with nitrile gloves. The point is very sharp, so not ideal for skinning, but that's not it's intended purpose. The tip allows precise cuts and reduces waste.

Great kitchen tool
Worth it for meat trimming. Worked so good at my last job that I had to pick it up for the house. Highly recommend, especially if you're not very dexterous with a knife
