Oh Martha Stewart ๐ ๐๐
This isnโt the KitchenAid brand, but somebody forgot to tell this pasta maker because it understood the assignment. Give me an hour, a good pasta recipe, and some homemade sauce, and suddenly Iโm Martina Stewart (Martha's protรฉgรฉ). Iโm rolling dough, cutting fresh pasta, and looking at my family like, โYes, I made this from scratch. Youโre welcome.โ ๐ The pasta maker works amazingly and is definitely recommended. Now, I cannot vouch for what comes out of YOUR kitchen, thatโs between you, your recipe, and the Lord. But follow a good recipe, and you just might have your family thinking youโve been secretly training in Italy. Honey, click it, buy it, love it. ๐๐

Very Durable Plastic And Stainless Steel Construction, A Bit Slow But Great Results
I milled durum wheat berries to make a fine semolina flour which I then used to make spaghetti, which I served with a thick and chunky bolognese sauce. The whole grain pasta tastes great, it's much more nutritious and it's more filling, providing all day energy without the high glycemic index of store bought pasta which lacks the bran and wheat germ. Fresh pasta cooks in two minutes. I need a bit more practice to get the pasta into the water without it sticking together during the slow extrusion process but it mostly separated in the boiling water on the first attempt. The bran, even though finely milled, makes the pasta more fragile and it tends to separate into short sections as it boils, but that wasn't too bad and actually makes the pasta easier to eat. I just extrude a bird's nest of spaghetti and boil it. The water becomes more starchy that cooking dried store bought pasta, but even on the first attempt, the pasta was delicious and I have a generous leftover meal tomorrow. I made a fairly soft dough, not wanting to tax the pasta press, but the auger and housing are very sturdy plastic and it had no trouble at all. The gearing is so slow that the pasta press runs very slow, even with the mixer on high speed. I wish it ran a bit faster but the mixer was so lightly loaded that it didn't get warm. I also wish there was a die for wider and thicker linguine or fettuccine. I'll try the fusilli die next. The cookie die is weird because it extrudes four completely different shapes. It could be useful if it had two bar shapes, maybe with ridges, so sugar cookies or shortbread could be extruded onto a cookie sheet. Maybe I should extrude the four different shapes 3/8" thick and cut them onto a cookie sheet to make tiny cookies the size of oyster crackers? Cleanup isn't too difficult. When the extruding stops, there is a tablespoon of dough remaining inside. The spaghetti die definitely retains dough in the small holes. I soaked it in hot water for half an hour while I ate and then used the supplied brush to dislodge the dough and rinsed all of the parts in hot water. The pasta press assembly has two parts. The upper gear head that attaches to the mixer should not be submerged and doesn't need cleaning. The lower portion that contacts the dough can be rotated to unlock it and disassembled from the gear head for easy cleaning. All of those plastic parts are dishwasher safe but despite the complex geometry the parts are not difficult to clean by hand, with the slight exception of the die plate and it probably only took a minute after soaking. PASTA 2 cups Durum wheat berries, finely milled into semolina flour 1.5 tsp Salt 1 cup Water Mix then knead the dough with the KitchenAid dough hook for 10 minutes. Cover the bowl and allow the dough to rest for at least 30 minutes. Select the die for the desired pasta shape, install the pasta press on the KitchenAid mixer, run on speed 9 and push 1" diameter logs of dough into the feed chute being careful to keep fingers well away from the auger. Extrude onto a plate, turning to keep pasta separated. Bring a large pot of salted water to a boil. Cook the pasta for 2โ3 minutes until al dente. Drain the pasta. Enjoy immediately for the freshest taste. Leftover cooked pasta can be warmed and eaten the next day.

Great!
I followed the pasta recipe that came with this and it caused one of the pasta shape discs and the housing to crack during my first use. I threw away that dough and made pasta the way I usually do and it has worked wonderfully! Even with the cracks, I havenโt had any issues. Iโve had this for a few months now and have probably made over a dozen dishes using this cutter. I love it!
