Are these appropriate for polyurethanes?

They are fine for all paints stains and poly coatings. I always recommend pulling the filaments and making sure any loose filaments are out before use.

Any good for painting polyurethane on cabinets?

I believe these are better suited for something you will not have to look at everyday. They are not the cheapest brush but good for wall touch up or between coats if your sanding. Final polyurethane coat needs a better grade of brush.

What are the brushes made out of? Are they good for chalk paint?

Type in the search bar “brushes for chalk paint” and you’ll see some natural bristled brushes that are round. Those are the best for chalk paint. I didn’t think it made any difference, but it really does.
