Product description ------------------- 23-25 Gram of Fresh Italian (Tuber Aestivum).Quantity can vary with +/- 2-3 gram due to truffle size. Shelf life is normally 6-7 days. The handling time will be 2-3 days at the most due to the product being Fresh from Italy.We receive fresh Truffles every Tuesday/Thursday. Truffles are High in fibre and only 1% , no cholesterol. We ship truffles with next day signed for delviery, in a small polybox with ice-acks that should kep the product fresh/chilled for up to 3 days. PLease let us know if you have an issue with your truffles with 3 days of delivery. We always recommend to take a picture if you have an issue, and we will normally replace then within 24-48 hours. Shelf life is about 6-8 days after you receive them. If you should have any concerns or questions then please don't hesitate to get in touch. It can happen thata truffles goes "off" en rtoute, then please let us know. We do recommend that you maybe take a picture, but we tend to be happy enough to replace. The best way to store your trufles is to wrap them in tissue and place them in an airtight container in the fridge. The rind or peridium is warty with small and not prominent black opaque warts. The gleba or pulp is black/purplish at full ripening, with thin white veins. The shape is usually rounded in specimens found in cultivated truffle beds while more irregular or lobed in specimens found in natural truffle beds. In truffle cultivations, thanks to the irrigation and soft soil, one can reach a larger sizes (about 700/800 gr). It usually ripens from December to March. The fruiting bodies of the black truffle exude a scent reminiscent of undergrowth, strawberries, wet earth or dried fruit with a hint of cocoa. Their taste, which fully develops after the truffles are heated, is slightly peppery and bitter. If stored at room temperature, the aromatic compounds dissipate, while storage at around the freezing point (0 °C) leads to an increased synthesis of these compounds.
