Stokely’s is used in many Chinese and South East Asian restaurants and households in the UK. Its high quality cream style corn is ideal for making delicious sweet corn soups. ***RECIPE: INGREDIENTS 200g skinless chicken fillets 1 teaspoon salt 1 egg 3 cups chicken stock 1 tin Stokely’s Cream Style corn 1 tbsp corn starch 1 whole spring onions, diagonally chopped into small pieces PREPARATION 1) Boil the chicken with 4 cups of water for 10 minutes. When cooked, remove from stock, rinse in cold water and pat dry. Dice into small pieces, when cold enough to handle. 2) Beat the egg and keep aside to use later. 3) Add Stokely’s Cream Style corn into the chicken stock and bring to a boil. 4) Add the chicken and mix well. Cook for 2 minutes in low heat. 5) Dissolve the corn starch in a little water and add to the soup. Stir until thickened. 6) Before serving, slowly drip the beaten egg into the soup and keep stirring. 7) Serve immediately. Garnish with spring onions.
