## Description

E-Jen containers are light, simple, and very easy to use and operate unlike heavy crock jars. Perfect for any kind of pickling and fermenting from Kimchi to Sauerkraut. Also E-Jen containers can be used to store just about anything and everything that fits inside. E-Jen storage container comes with an adjustable pressing plate that acts as an inner vacuum. Fermentation allows food to retain more vitamins and minerals than other types of preserving. The pressing plate keeps the kimchi/pickles in an airtight space promoting an anaerobic state benefiting the growth of probiotics (lactobacillus). Anaerobic process; requires an oxygen-free environment. If oxygen is present, the wrong organisms flourish instead of the friendly bacteria and/or yeasts we want to cultivate. The design and shape of the containers make it easy to store goods in both the refrigerator and in the pantry without taking too much space. It contains and blocks smells and odors better than most containers due to the double lids and prevents smells/odor from lingering in kitchens or refrigerators. Have had this for a while but just got round to using it. I made some sauerkraut and decided to ferment it in the e-jen. I didn't need to stuff a jar and tamp it down, there was no need to cover the cabbage with a large cabbage leaf or bags of water to keep the cabbage under the liquid. The inner lid creates an air tight seal and the outer lid keeps the smells in. The cabbage fermented quite quickly and after only a few days I put the whole box in the fridge. It is quite expensive but overall I would say it is worth it.
