That way they are easy to get out and fit in the fridge nicely. I scoop about a quart of the olives out of the container with a strainer spoon, then rinse the brine off and add water to the top of the olives in another container. By the next day the salt content is about right. Otherwise way too salty for regular use. An added bonus is using the brine to add some salt and flavor to homemade hummus and soups! Then I dumped that water off and refilled it, with plain water again added more garlic, red pepper flakes, whole fresh lemon, peel and all, and some olive oil. It’s absolutely perfect now.
