Product Description The Norton Crystolon and India IM313 11-1/2 inch three-stone sharpening system includes 100-grit and 150-grit silicon carbide stones and a 320-grit aluminum oxide stone, a self-contained three-stone bench sharpening unit with a lid and no-slip rubber feet, a reservoir, an angle guide, and a 16 oz. bottle of sharpening stone oil for lubrication. In the top of the bench sharpening unit, a rotating axis holds the stones firmly in place, protecting them against breakage, and bringing the desired stone into position for sharpening. The base of the sharpening unit is a reservoir that allows submersion of the unused stones, keeping them clean and saturated. The angle guide helps to position a tool correctly for sharpening. The three stones in this system are used sequentially to restore cutting edges on straight-edged tools, such as knives, chisels, plane blades, and precision instruments; the 100-grit silicon carbide stone is suitable for repairing a cutting edge, while the 150-grit silicon carbide stone is suitable for sharpening and maintaining the edge, and the 320-grit aluminum oxide stone produces a honed cutting edge. The sharpening stone oil meets FDA requirements for use near food, and consists of pharmacopeia-grade mineral oil formulated with the correct lubricity for oilstone sharpening. It prevents metal from bonding with the abrasive surface by flushing away dislodged abrasive and metal chips. Each stone is also prefilled with oil to save time and eliminate the need to presoak it prior to use. The silicon carbide stones are fast-cutting and offer effective sharpening, even under light pressure. The aluminum oxide stone has a tough fracture- and wear-resistant grit that is more durable than silicon carbide and capable of sharpening to very close tolerances. Each stone is created by grading the material to a consistent particle size and blending it with bonding agents. It is then molded and surface-finished. These unusually large 1/2 x 11-1/2 x 2-1/2 inch (H x W x D) oilstones, which are suitable for bench use, are harder and more durable than a waterstone. (H is height, the vertical distance from lowest to highest point; W is width, the horizontal distance from left to right; D is depth, the horizontal distance from front to back.) They conform to the American National Standards Institute (ANSI) abrasive grit standard. Sharpening stones, or whetstones, are abrasive surfaces used to sharpen and hone the edges of steel cutting implements, such as chisels, knives, scissors, hand scrapers, and plane blades. Sharpening is the process of creating or re-establishing a cutting edge by grinding away portions of the metal to adjust the angle of the edge and reform the shape. Honing removes small imperfections. Stones can be flat, for working flat edges, or shaped, for edges that are more complex. Sharpening stones are made of natural or synthetic materials that range from softer to harder, and are categorized by the size of their abrasive particles, known as grit. A stone with a coarser grit is used when more metal needs to be removed (e.g., when sharpening a nicked or very dull blade); the stone with the finest grit produces the sharpest edge. I can't tell you how much I enjoy bringing a knife to a sharp edge with this thing. It is a meditative activity for me and this makes it so easy and cuts down on mess because any excess oil just goes into the reservoir. I can't recommend this product enough. If you think you will do a decent amount of sharpening or have a knife collection that you want to bring to a razors edge, this is what I would recommend you do it with!

## Questions & Answers

**Q: How often do you clean the oil basin and stones with soap & warm water or just a water rinse of the stones and oil basin to remove the slurry?**
A: Norton recommends using only tap water for kitchen and household knives, and you can just rinse the stones off. One reason they cite is that any oil dripped on a hard countertop can allow the unit to slide around. I wouldn't use soap at all not sure what that would do to the stones. In my experience water takes a little longer to saturate the stone, and it needs to be turned through the reservoir often to remove the slurry and re-wet the stone. I changed to oil and while a little easier, it is messier and Norton is correct, a few drops falling from the blade will eventually make it slide around so use some newspaper if you use oil. With oil, I don't fill it, I drizzle it on, smooth it by  hand and let the reservoir act as a catch basin. Unfortunately the 320 fine grit stone is far too course for good kitchen knives except as a starting point. This would be good for tools, but nowhere near what you need for a razor edge.

**Q: How much oil do I need to refill?**
A: Fill it just until one of the stones is in the oil while being in a flat position in the oil. You don't want to overfill these because you really don't need a lot of oil on them. The oil is there to not only lubricate the stone, but also clean off the metal particles. Also when over filling, it is very easy to spill the oil when moving the stone system.

**Q: Can I get new stones for the tri stone sharpener?**
A: Yes, the IM313 Sharpening System holds stones measuring 11.5" x 2.5" x .5"

**Q: What stones can be used without oils? On 313 system?**
A: If you are asking if there is a stone that is factory placed on this system, the answer is none.  The frame allows for the replacement of stones.  If you replaced the stones with water stones or diamond, then water would be used in the reservoir.  If you replaced them with a ceramic stone then it would be used dry.  The system is designed to use the factory stones with oil.

### ⭐⭐⭐⭐⭐ Solid investment

Ok, so you might be debating on the price as I was, but think of it as a lifetime investment because that's what it is...it will be the last knife sharpener you'll ever buy. Electric sharpeners eat knives up and don't hold a candle to this product. I own a restaurant and there is absolutely nothing worse than working with a dull knife. It makes doing your task a nightmare. So, with all that being said there is a small learning curve with it but not much, just get on YouTube to get the fundamentals down. Eventually you will begin to to sharpen your knife by "feel" in no time. I can't begin to tell you that with some practice your knives will be hair splitting sharp! A bit of advice is NOT to use the course stone unless you've got a very dull knife. The medium course stone followed by the fine grit can bring life back into your knife. If you really wanna get it to the next level you can strop it using leather after those two steps, but it's def not necessary. This product may be overkill for someone who cooks occasional, but for anyone who uses knives daily it's a solid investment and I can't praise the craftsmanship enough.
