The stainless steel blades are beautiful and sharp and the handles have the best hand feel of any knife I've used. The choil is beautifully tooled and set at a 45 degree angle, allowing for an excellent and comfortable pinch grip. I still love my japanese knives, but I Iove these pros equally well. They are bigger than expected which is why I included a picture with measurements for comparison.
