I always test a new knife on an over ripe tomato. I had a couple that were really ripe and soft, and this knife sliced them as if they were firm and fresh off of the vine. Absolutely no pressure needed and there was no squashing or squirting juice and pips. Impressive. Really razor sharp and well balanced with a comfortable none slip handle. The handle design makes for safer cutting. The blade has just the right amount of flexibility to make sure that you can stay close to awkward shaped bones, and also easy to use for filleting fish. So a multi function knife. Perfect size and it feels really well made and durable. I'm buying another. Quality at this price? It's a bargain.

A great boning knife at a very reasonable price. Not a 'drawer queen', but a good, easy to handle, well sharpened knife with a good blade shape and profile. Easy to care for and well suited to real world use.

Easily one of the best knifes for deboning, the steel sharpens easily and the grip is commercial grade, amazing for the price.

nice knife, really sharp and looks really nice - only criticism is that for a boning knife I'd expect the blade to be more flexible it's a bit too stiff to be a good boning knife.

I've got a few Starrett knives. Out of the box they are eye wateringly sharp and while they don't hold an edge as long as an expensive chefs knife they do sharpen up quickly with a steel. It sits nicely in the hand and the thin blade is strong and well balanced. A good size, highly recommended.

On ne peut mieux, pas cher et livré TRÈS Tranchant, attention aux doigts. Mais c'est vraiment parfait. Même après correction du fil au fusil il reste tranchant, et après l'avoir aiguisé c'est pareil. Je me suis dis qu'un couteau pas cher n'avait pas un bon métal, Pour celui-ci je me suis trompé et j'en suis très heureux.
