How do you use the cork pour spout?

Pull off the wood/cork stopper(like a wine bottle) then push in the cork stopper with the glass tube in side(it too has a cork stopper that covers the glass tube) the glass tube has a little pour spout moulded on one side. Simple but works great ! The balsamic vinegar is the tastiest for the price. I have seen it used as part of the condiments on the table in restaurants in Italy (Way back in the day when you could travel).

How old, how long has the balsamic been aged?

It is not clear on the bottle how long this vinegar has been aged, but it seems equivalent to 12-15 years based on my experience of balsamic vinegars that I have purchased in Italy.

Does the bottles carry the I.G.P stamp?

The IGP is on the back of the bottle. Best Balsamic Vinegar ever!

How many carbs? net carbs?

I don't have a bottle with labels anymore but I looked at the 16 oz. bottle and they have a pic of the back label. It looks like 75 grams per 100 ml. (1/5th of the whole bottle. Not sure of this as the pic is fuzzy. I love this product but haven't re-bought it because it's so expensive. It's thicker than regular vinegar and has a very rich sweetish taste.
