King of knives !
I recently bought the MITSUMOTO SAKARI 8 inch Hand-Forged Japanese Gyuto Chef Knife as a birthday gift for my wife, and it has exceeded all expectations. This knife is a work of art, combining traditional craftsmanship with modern precision. The hand-forged blade is incredibly sharp and cuts through ingredients with ease, making meal prep a joy. The balance and weight are perfect, providing a comfortable and secure grip. My wife loves the beautiful design and the way it enhances her cooking experience. This knife is not only a practical tool but also a stunning addition to our kitchen. Highly recommended for anyone looking for a high-quality chef knife!

Is it good one? Yes
First of all at some point I was hesitant to buy this one because of the comments, but then decided to try. With simple & short notes: 1. It’s extremely sharp, yes and can cut even carton like a butter. 2. Materials quality are very good but not best of best. 3. Very light and super easy to use. Overall very beautiful and sharp knife. I am not regretting at all that I bought it.

OJ Approved
I recently purchased the 8 inch Hand-Forged Japanese Gyuto Chef Knife, and I have to say, it's truly a cut above the rest. The craftsmanship and sharpness of this knife are exceptional, making it a joy to work with in the kitchen. It's like the white bronco of chef knives - sleek, reliable, and gets the job done with precision. Whether you're slicing, dicing, or chopping, this knife delivers top-notch performance that would surely earn the approval of even the most discerning chefs, and maybe even a certain white bronco enthusiast. I highly recommend this chef's knife for anyone who values quality and performance in their kitchen tools.

Love this knife!
I have to admit that I have a soft spot for exotic knives. This one caught my attention as soon as I saw it on Amazon. It was a little pricey, but I had to have it. Out of the box, it was everything I thought it would be – high quality and great looks! It’s sharp and I love the way it feels in my hand. The weight distribution is just perfect. I highly recommend it to anyone who recognizes the quality craftsmanship and design of a good Japanese blade.

Best knife I've ever owned
I sharpen this weekly with a WorkSharp, I only use the ceramic (very fine) surface to sharpen this knife, because i do it every week... It is basically a Katana for my kitchen. I never let any guests use this knife. I sharpen it very carefully and take care of it. The handle is gorgeous. The blade is so sharp it can cut through time. The item arrived before I ordered it.

Very nice blade!
This knife is beautiful. I have been debating buying it for a while but balked at the $188 price. Out of the box it wasn't as sharp as I thought it might be. It rated 125 g on the Edge On Up sharpness tester which if you look at the chart, that is razor sharp. I gave it a few passes on the leather strop wheel with some polishing compound and it brought the edge down to 75 g which is double edge razor sharp. After stropping it did a push cut through magazine paper with ease. Used it two days in a row now and I really like it. Goes through an onion with ease as well. The drastic curve on the blade can make it a bit tricky. If you are push cutting instead of rocking the knife, you can miss slicing all the way through due to the way the blade is curved. Time will tell my degree of love for the knife but as of right now I really like it!

This is a show quality knife
Fit for display, beautiful craftsmanship and clever design. The cut of this knife and the handle makes it suitable for carving and heavy cuts. It's very easy to exert downward pressure while slicing or chopping because of the way the knife is designed. This is what you want to use to divide up a 3" tomahawk or Florintine steak (thick t-bone). These knives are made in China. If they were made in Japan they would sell for 4 times as much. I proudly added it to my display of Japanese knives. The weight is just right. Mine came in at 7.5 ounces, about the same as a typical Shun with a bolster. By the way, all knives with this hardness level and blade thickness will chip, even the high-end Japanese knives. I've had some very good knives, even German knives, chip or break due to dropping. The advantage of hardness is the knife will hold an edge. Most chips can be ground out pretty easily.

Beautiful knife, not sharp.
This is the first review before I have extensively used this knife. I am very surprised to discover it doesn't seem to be very sharp. It does cut paper, but as an experienced knife sharpener and tool sharpener for woodworking, this thing is going to need to be improved. Debating whether to keep it and sharpen it, or send it back. That is why four stars. Second review: extremely disappointing that I can't even cut through an onion with this knife. It's quite dull which I could tell when I first got it. I didn't know it would be this dull. Just on the chance it was a weird onion, I pulled out one of my other knives which went through easily. Seriously deciding whether to try to sharpen it myself or just send it back. It's fairly expensive. Third review. While others have been satisfied with this product, and it has much to recommended it, a knife of this expense and steel quality should arrive like a razor. It did not, so I returned it.

This is a great knife. I gave it to my daughter and her eyes lite up. This is a beautiful knife. Fits your hand perfectly/comfortably. Razor sharp. Comes in a beautiful gift box. Has a lovely wooden blade protector case. She'll probably have this long after I'm gone. Easy to sharpen. I use a 1000/6000 stone and this blade restores in just a couple of minutes. Holds an edge well. I wish I had one for myself but it is expensive.

first, I'd like to say this is probably the most well-made knife I've ever received and used. Razor sharp well balanced and holds an edge better than anything I have used to date. The customer service @ MITSUMOTO SAKARI is hands down the best in the business when thy say 100% satisfaction they mean just that I had an issue with the first knife I was shipped through Amazon prime These people looked after me until everything was dealt with, and I was happy. The products they sell are hands-down top of the line, and so is the customer service they provide.

I bought this knife after being ripped off trying to buy a other set of true Japanese knives this one clearly stated it is made in Japan it is NOT it's made in CHINA by a Japanese knive company I don't know if it is even Japanese steel although that probably doesn't matter much, even if this product is up to their specifications it's still not made in JAPAN so why did I pay $300.00 + Australian dollars for CHINESE item. I know for a fact that many Japanese knive companies are getting sick of this as well as us buyers. I did all the vigilant research I could before buying this and it's only later I find evidence also the handle is sposed to be wood yet it feels plastic and sounds plastic too. DO NOT BUY IT Basically a nice knife but not real Japanese Worth $100.00 Aus $

I never had to contact the seller and the shipping took a little while but that was expected over all everything went smooth as far as the product itself I almost bought the knife for $345.00 but I got a e mail for Black Friday and the price went down to $160 so I ended up paying less then half now that was a bonus I read all the reviews and watched the video’s and it seems this product is high quality so I’m happy.
