The bourbon flavor that they describe comes from the barrels in which they age the maple syrup. The barrels were originally used to ferment bourbon and repurposed for the syrup. This is technically not an added ingredient, just a little flavoring. Absolutely no alcohol would be transferred over in this process.

Natural maple syrup requires refrigeration after opening, otherwise it gets some kind of mold.

Historically, the USA and Canada had different grading systems, and states and provinces also had their own rules.
