I've been looking for this type of flour for ages and it is perfect for high hydration and long ferment doughs - so a dream come true after searching for so long.

The 'very strong' in the title means very sticky gluten with super elasticity. It's great tasting, though made far more dense bread than I expected, so adapt recipes accordingly.
