Easy way to thicken liquids
Unlike powdered gelatin that needs to be hydrated in cold water before adding, these are soaked in cold water for a couple minutes before shaking off excess water then adding to a hot (>98F) liquid, where it melts and thickens it. 170 bloom is not the highest thickening power but for the price, it's very good. It works well for creme patissierre, roux, even making a liqueur gel, which looks pretty in a clear glass.

These sheets behave really well. They dissolve nicely and work well with pastry applications

Good, but watch the amount needed.
These are "Silver" level gelatin leaves. If your recipe calls for a "Gold" level leaf, you may have to adjust the amount of leaves needed to get the same setting consistency. Otherwise, it works well and more stable than powdered gelatin.
